Logan's newest thing he wants to do when he comes to my house is to make something. So his this was his request last Wednesday morning. I went to the cupboard to see what I had. I found some cake mix and orange jello (there was more in there, I just decided after finding these what we could make) and decided we would make Poke Cake. Have you guys heard of this, because when I posted what we were doing on f*cebo*k, I got lots of questions. Any way Logan helped make the cake, then came the fun part of poking all the holes. The last time I made this, I used a fork, but it make too many little holes, so after some digging, I decided to use a twisty straw( you could use a regular straw) and this made perfect holes. We had so much fun making this and it was super tasty espcially with all the hot weather we have been having.
Poke Cake
1 white cake mix (and all the ingredient for that)
1 small box of jello, your choice of flavor
1 cup of boiling water
1/2 cup cold water
1 small container of Cool Whip
Make the cake according to the directions on the box. Let it cool for about 20 minutes. While the cake is cooling, make the Jello, first stirring in the boiling water, then the cold water. Once the cake has cooled, take your straw and poke holes all over the top of the cake. Pour the Jello over the top of the cake. Put it in the fridge for about 2 hours. Go to McDonald's Play Place and have some fun(that part is optional and I dont' do that when I am here by myself!) Once the cake has set, frost the top with cool whip and enjoy. By using the orange jello, this reminded me of an orange creamsicle.

We always loved poke coke growing up! I think it's awesome that Logan wants to cook! I sure wish my boys did :)
YUMMY! I have made poke cakes before! It is so moist!
So...already thinking about the classroom?!?! Ugh! I found a job teaching just 2 mornings a week. It will be nice to still be in the classroom a little, but SO nice to be at home with my kiddos more!
